1/3 cup milk
1 cup bread crumbs (fresh)
3lbs ground meat (1 lb of each,ground pork,veal and beef)
3 eggs - lightly beaten
3 minced garlic cloves
1 3/4 tsp salt
1/2 tsp pepper
1/3 lb mozzarella or provolone cheese - cubed 1/2"
6 cups tomato sauce or pasta sauce
2 lbs cooked & drained spaghetti
Extra-virgin olive oil (for frying)
Grated parmesan or parmigiano-reggiano blend
Combine milk & bread crumbs in large bowl. Add meat, eggs, garlic, salt & pepper. Mix quickly by hand. Form into 2" balls and seal cheese cube into center of each.
In large electric skillet on medium-high, heat 1/2" oil until nearly smoking. Brown meatballs 1 min each side & put on paper towel-lined plate.
In pan, heat sauce to simmering on medium-low. Cover & simmer until cooked through- approx. 30 minutes, stirring occassionally.
Uncover and comtinue simmering 10 mins. Serve over pasta w/grated cheese.
