I am not quite sure of the menu tonight. But I want to make homemade Bavarian Beans & Spaetzle. Not sure of the other dishes. Beef or chicken.

That casserole was fantastic!
The corn was good as well.
We decided not to have a fire because the kids were grumpy and tired.

Decided to make a Oaxcan mole negro I found in a Chile Pepper magazine. It had 26 ingredients and the sauce took just under 4 hours to make. There is enough sauce leftover to make a couple more meals. It was well worth the time and effort. We had the sauce with chicken, homemade blue corn tortillas and Mexican green rice.

so . . . . how long did it take you to figure this one out?
me - 4-5 years....

backstory
we don't eat a lot of red meats comma anymore. (don't ask . . .)
I watch the (supermarket) meat shelves for "manager's specials" because often I can pick up USDA Prime graded beef for $4-6/pound. cryovac'd packed, aged out on shelf live, immediate cooking/consumption recommended....
beef tenderloin steaks is one I'm always on the watch for.

here's the problem: I'm a medium rare type, DW is a "no trace of pink" type.
the beef tenderloin cuts are typically in the .4 lb each, two to a pack, 1.5 inches thick. cooking that thickness in both medium rare and well done is super ultra tricky....

as I set out the other day on this dilemma voyage, it dawned on me.

I sliced "hers" in half - mine is thick, her's was half thick.

heavy sear in super-hot cast iron....
followed by 6 minutes in 350'F oven on a rack....
5 minute covered rest.

absolutely perfect results.
I had a nice crust with a hot red center.
she had two pcs with a nice crust, no brown, no-way overcooked and smishishly tender still....

add a mess of cremini&onion.

Got a round loaf of Italian Hoboken crusty bread to eat as a stew mop and pusher....

I have to take my dinner break right after my first med pass, so I eat normally between 4:15/4:30.
If not, I may not get one.

Anywho, chicken tenders, au gratins, mixed vegs.

Brunch was scrambled eggs with a sprinkle of Frank's and tomato salad (heirloom cherry tomatoes, fresh garlic, basil, salt, pepper, olive oil & red wine vinegar) and crumbled feta cheese.

It was chicken salad sandwich.
Tater chips, pickled beets and pears.
It was ok.
No salads made up today.
Maybe next time.

Homemade pot stickers. The half moons are pork and the rectangles with wings are crawfish. Sesame and soy sauce for the pork ones. Citrus for the crawfish.
