Mocha cheesecake squares


Crust Ingredients:
1 cup all-purpose flour
1/4 cup sugar
1/4 cup dark brown sugar
1/2 teaspoon Instant Coffee Crystals
1 cup finely chopped pecans
4 ounces butter, melted

Directions:
1. Preheat oven to 350° F.
2. Mix together all crust ingredients in the food processor or with mixer, until
thoroughly mixed.
3. Press into bottom of a 13 x 9 x 2-inch baking dish.
4. Bake for 15 minutes in the preheated oven. Cool.

Filling Ingredients:
16 ounces cream cheese, softened
1 cup sugar
3 large eggs
2 teaspoons vanilla
2 teaspoons Instant Coffee Crystals

Directions:
1. In food processor or with mixer, beat the cream cheese with the sugar until smooth.
2. Beat in the eggs until mixture is fluffy.
3. Dissolve the coffee in the vanilla and beat into the cheese mixture until well blended.
Pour into the crust and return to the preheated oven for 20 minutes or until set.
4. Remove and spread on the topping.

Topping Ingredients:
2 cups sour cream
6 tablespoons sugar
1 teaspoon vanilla
1/2 teaspoon Instant Coffee Crystals
Pecan halves for garnish

Directions:
1. Stir together all ingredients gently with a fork until blended.
2. Spread onto the hot cake and return to the oven.
3. Bake for 5 minutes.
4. Cool and chill.
5. Top each square with a pecan half.
(Makes 30 squares.)

Dee, one of my favorite flavors is mocha, but I always thought it was the combination of coffee and chocolate.

Is there no chocolate or cocoa in your cheesecake recipe?

The coffee flavor sounds good, too!

You can add 2-4 oz semisweet chocolate for the mocha flavor depending upon how strong you want the flavor to be.

Susan, would you melt the chocolate and add it to the filling?

Absolutely, I would melt the chocolate in a double boiler. I would probably go with 4 oz even 6oz. because there is so much instant coffee crystals but it depends upon your personal taste. I reallylove chocolate.
