[FONT=Arial, Helvetica, sans-serif]2 cups ricotta cheese[/FONT]
[FONT=Arial, Helvetica, sans-serif]1 egg yolk[/FONT]
[FONT=Arial, Helvetica, sans-serif]1/3 cup superfine sugar[/FONT]
[FONT=Arial, Helvetica, sans-serif]Grated rind of half a lemon[/FONT]
[FONT=Arial, Helvetica, sans-serif]1/2 tsp. vanilla extract[/FONT]
[FONT=Arial, Helvetica, sans-serif]1 level tablespoon cornstarch[/FONT]
[FONT=Arial, Helvetica, sans-serif]1/2 cup white (golden) raisins[/FONT]
[FONT=Arial, Helvetica, sans-serif]Directions:[/FONT]
[FONT=Arial, Helvetica, sans-serif]Place the cheese in a large mixing bowl. Beat in the eggs yolk, sugar, lemon rind, vanilla extract and cornstarch. Then using a wooden spoon, stir in the golden raisins. Chill.[/FONT]

[FONT=Arial, Helvetica, sans-serif]Instead of the raisins, I could drain some sour cherries, -packed in water and add them to the cheese mixture. However, you need to ensure that they are drained very well.[/FONT]
[FONT=Arial, Helvetica, sans-serif]I have used this filling to make hamantaschen and it is very, very good.[/FONT]

Great! I love all those cheese filled pastries but never could figure out exactly what it was or how to duplicate it!
