Gibbs Rule #9… never go anywhere without a knife.
I usually carry three and sometimes 5 or more when
traveling by car. The one that gets the most use for
food prep is a RAT 1. When I travel with the picnic
hamper I throw in a chef knife for just in case.

The RAT 1 is the folder next to the car keys.

Yep, just forgot to pack them. Glad we drove and I brought a lot of stuff from home, groceries are higher here.

After we dropped Maddie off at school we stopped at
Wasatch Bagel Café to get coffee and ended up eating
breakfast. I had the 4 egg omelette with ham and cheese.
Nancy had bacon and eggs and gave me half her bacon,
very salty but tasty. I’m stuffed and good till dinner.

The brown stuff you see on the corner of the eggs is cinnamon.
I thought it was some kind of hot pepper and wanted a taste.
My mistake. I added Tapatio to it and it was actually quite good.

I thought, "Oh, wow, fried rice with bean sprouts as a breakfast side dish - great idea!" Looking again, they're probably very light hash browns, right?

You are correct and my bud from Ontario noticed, as well. They are barely fried hash browns. This is a Mexican managed place And probably not used to doing them. They rushed my order out as well. The omelette was good, though.

Yeah, I always make a point to tell the waiter, "BURN 'EM"!!!!! Then I explain that I don't mean that literally but for them to let the cook know I want them very, very crispy and I don't mind waiting a bit longer for that.

I am not a big Fan of Denny's. But the one thing they
do is make good Hash browns.

Even there I have to ask them to make them extra crispy. Your Denny's might be better than ours I think. The only place that ever really did them the way that I like them is Waffle House. I haven't eaten at Waffle House in probably 25 years...there is one in Akron but I am not sure if it's as good as the ones in Florida I used to eat at when I lived there.

I made another batch of egg bites in the steam oven. (This mini crustless quiches). Eggs, Jarlsberg, sauteed onion, spinach, mushrooms, chives. That will do us for a week of breakfasts.View attachment 55143
I've made those many times, so versatile! Last time i used red cabbage, kale, mushrooms, red and yellow bell pepper, onion, bacon, and white cheddar. So good!
