Peep's Breaded & Fried Mushroom Caps

  • Whole button mushroom caps
  • Peanut oil (or oil of choice, I tried bacon fat this time)
Breading Ingredients:

(All to taste and according to number of mushroom caps you have)



Dredge flour:
  • All Purpose flour
  • Peanut flour - Optional
  • Flaxseed meal - Optional
  • Ground sea salt
  • Ground peppercorns
  • Ground red pepper flakes

Egg wash:
  • Beaten Egg
  • Milk (or buttermilk)
  • Ground sea salt
  • Ground peppercorns
Crumbs:
  • Panko Unseasoned bread crumbs
  • Oregano
  • Garlic powder
  • Onion powder
  • Goya Adobo Seasoning
  • Ground Sea Salt
  • Ground peppercorns
  • Ground red pepper flakes
  • Cayenne
  • Paprika
  • Thyme
  • Rosemary
  • Fresh grated Romano cheese
  • Fresh grated Parmesan cheese
  • Accent - Optional

  1. Heat oil heavy pan (I used cast iron pan) or deep fryer.
  2. Wash mushroom caps and trim stems.
  3. Mix the ingredients for the 3 breading stages in separate trays/bowls.
  4. Dredge mushrooms in the flour.
  5. Then dip in egg wash.
  6. Then coat in crumb mix.
  7. Drop mushrooms in oil and fry 2 minutes on each side or until golden brown.
  8. Drain and serve hot.
Note: I had bacon fat so I decided to try frying in that. They tasted great. Not greasy at all because the fat was so hot when the mushrooms hit the fat the breading was sealed keeping the fat out and the wonderful mushroom juices in.

I'm glad you tried them with the bacon fat.
I can only imagine what they must have tasted like ;)

You sure do put a lot of hard work into each and every thing you make, whether it's a salad, a side or an entree.

I have been reading everyones comments about frying in bacon fat and how it adds so much flavor. So I have been saving it. This is the first time I had occasion to use any. It's in a container in the back of the fridge and I never remember till after I am done cooking whatever. I had about a pint saved. Last night I fried my bacon in the CI pan I wanted to use to fry the mushrroms so instead of dumping the fat I just added a bit more. You can't tell from the pic but thats a 10" CI pan and there was only about a 1/2" of fat in it.

Thank you cooksie. The bacon fat gave them a wonderful different flavor. Hub didn't really like it. He loves bacon though. I think he was being contrary last night!! LOL
