I'm a sucker for fresh wax beans and buy them whenever I see them. Scored more at the Farmer's Market.

Served with a grilled smoked pork chop (half) and grilled poblano, a bit of brown rice and grilled roma tomato.

It's refreshing and has very little alcohol.


I'm trying a Lee inspired dish tonight.
Sheet pan smoked paprika chicken thighs with roasted vegs.

I made enchilada for dinner. Took a pound of tomatilla, a poblano, a jalapeno, some cilantro and cooked it down to a green sauce. Carnitas from the freezer rolled inside of corn tortillas, topped with the sauce and some cheese.

Really better than the Mexican restaurant, and I was able to control the salt and fat content.

Was on hospital food since sunday;
Diabetes took over and caused cellulitis on both shins.
I came home today, and have to follow up with wound care.

I will say, the hospital food was not bad. Just a little overcooked.
Oh! But, I lickrd my platter clean. hahahahaha
