PICKLED EGGS AND BEETS

PICKLED EGGS AND BEETS

6 hard-boiled eggs, shelled
1 can sm. round beets
Combine the following: 1 c. white vinegar
1 c. beet juice (add water, if
necessary, to make 1 c.)
1 tsp. red pepper flakes (or 2 jalapeno's, topped and sliced length-wise)[FONT=&quot][/FONT]
1/2 c. cocktail onions
1 tsp. salt
Combine the vinegar, beet juice, pepper flakes and onions in a medium saucepan. Boil gently for 5 minutes. Cool.

Place eggs and beets in a large sealable bowl or large Mason jar.

Pour vinegar mixture over eggs and beets, cover and let stand 48 hours
in refrigerator.

I just helped out a friend in Ontario do a batch of these - the first time he's tried making pickled eggs. ... looks good.

Last week my brother wanted tuna salad with hard-boiled eggs so I did up a dozen steamed hard eggs, used four in the tuna salad and pickled the rest. I've been eating an eggs and some beets every day as I'm the only one that likes :heart: them.

they're popular amongst my family-- they luv 'em-- usually beets via a can, tho;-- (slices),-- & vinegar, wht. onion slices, too, & nominal seasoning, if we would season; then of course, eggs-- most kept them whole; a few would slice them in half--
then into ball jars & eggs we have--

Back in 2015 I made pickled beets using the Kerr recipe, which I like but the mrs doesn't, so they got shuffled to the back of the shelf. She doesn't like the cinnamon in the brine. I have a lot of hard boiled eggs from Easter so thought i'd make a batch of eggs with the cinnamon flavored brine. She doesn't like pickled eggs either so I get them all. This brine is a lot darker than the Ball recipe, for some reason.

Speaking of loving pickled beets. When I get back from this road trip
I‘ll be making another batch. My stores are nearly depleted.
