1/2 c sliced celery
1/2 c diced onion
1 c sliced carrots
2 cloves chopped garlic
1/4 c tomato paste
16 c water and stock combination
1/2 # orzo
1 venison bone with meat still on the bone
Sweat the vegetables in the bottom of a large stock pot. I don't add any fat. Add the paste and cook for another minute. Add the water and stock and the bone. Simmer for 3 hours. Remove the bone to a cutting board. Let it cool enough to handle. Remove the meat from the bone and chop. Return the meat to the pot. Hang the bone from a tree in your front yard. (what, doesn't everyone do that???) Bring the soup to a simmer. Add the raw orzo. Simmer for 20 minutes. Serve with grated romano cheese.
(I tend to add any fresh herbs I have around to the soup pot...in this case I had rosemary and sage.)
