Well it's an Instant Pot (IP) day! LOL DD requested soft boiled IP eggs and English muffins for lunch. Then I will give IP apple sauce a first go round. I plan on using Granny Smith, gala and macintosh apples. For dinner it will be IP bottom round roast (stew or pot roast TBD which) or corned beef, potatoes and cabbage.

We're just snacking around on... pickled herring on crackers, seafood and shrimp salad on crackers, nacho cheese sauce with tortilla chips, and some sort of chicken wings. Haven't quite decided which kind of flavored wings I'm going to make.

Well the pressure cooker apple sauce came out nice. It took 7 minutes in the Instant Pot. Then ran it through the food mill.

After dinner last night I pan fried some country ribs, sauced, and put in the crockpot for tonight. I started them before leaving for school. By the time I got to school classes had ben cancelled. :twak: I had a nice drive.

Last night's takeaways on Coconut Shrimp...

a. - Should have gotten the 15-20 count ! (These were too small to
Butterfly; they were slightly over-done by the time the coconut browned up......)
b. - Make sure you have orange or peach marmalade in-house..........

back story: we've recent gotten smitten with homemade egg rolls.
compared to take out, utterly ueber munchous . . .

anyway, it leaves me with cabbage - any t&t "cabbage roll" recipes - other than shrimp (which is the egg roll flavor-of-the-month)

done in a casserole, smother with . . . type of stuff . . .
Ukraine neighbors from way back when had some to-die-for type dishes.

I'll do this again. It was really good. I used a recipe for sesame noodles and added some chicken, snow peas, carrots, and ginger.
