Cowboy Stew

A good and easy stew to make, this is our take on it:

12 slices bacon[FONT=&quot][/FONT][FONT=&quot]
[/FONT]1 clove garlic, crushed[FONT=&quot]
[/FONT]1-1/2 lbs. hamburger[FONT=&quot]
[/FONT]2 cans diced tomatoes[FONT=&quot]
[/FONT]1 tsp. salt[FONT=&quot]
[/FONT]1 T. chili powder[FONT=&quot]
[/FONT]1 can whole kernel corn, draine[FONT=&quot]d
[/FONT]1 can kidney beans, don't drain[FONT=&quot]
[/FONT]2 cups cubed potatoes[FONT=&quot] - pre cooked
[/FONT]1 cup sliced onion[FONT=&quot]
[/FONT]1/4 tsp. pepper

Cook bacon until crisp, remove from pan and pat dry. saute the onion in the bacon grease until tender. Add hamburger and garlic and brown. Add tomatoes, salt, pepper and chili powder and simmer for 30 minutes. Add remaining vegetables and simmer 15 minutes.

Variations:
You can add 1/2 of diced green peppers, or for something spicer add in some of your favorite hot peppers!
For presentation you can hold back some of the bacon and sprinkle on top before serving.

Goes great with cornbread!

is it similar to a chili con carne, with potatoes and corn?

i remember when i was a small boy, i told my parents that i would be a very good cowboy because i absolutely loved hot dogs cut up into baked beans. somewhere i got the idea that that's what cowboys ate.

LOL BT. It is actually a more clear stew, not a thick one.

Funny, I still cut up hot dogs into baked beans :)

This looks lovely - but I don't think the boys will eat it. Shame.
