Maple Pumpkin Cookies

I got this recipe out of a local newspaper, and they sounded great. My idea was to make these, and serve them with Trader Joe's Pecan Pie ice cream for dessert on Thanksgiving.

Well, the cookies are just "eh". I made half with Craisins, and half with walnuts. I am not a big fan of "cake-y" cookies.

I called my father and told him to go ahead and order the pie. :huh:

Maple Pumpkin Cookies

1 cup maple syrup
1 cup pumpkin puree
1 egg
1 stick butter, softened
2 cups flour
1 teas baking powder
1 teas baking soda
1/2 teas cinnamon (I used Vietnamese)
1/2 teas salt
1/2 cup chopped walnuts
grated nutmeg
1 apple, peeled and grated

Preheat oven to 350 degrees. Grease 2 or 3 baking sheets.

Cream the butter. Mix egg, maple syrup, pumpkin. Add half of that mixture to the butter and mix.

Mix together flour, baking powder, baking soda, cinnamon, salt and nutmeg. Alternate adding the dry ingredients to the butter mixture, with the rest of the wet ingredients and mix until just blended.

Stir in walnuts and apple. Spoon tablespoons of batter onto cooking sheet about 2 inches apart (mine did NOT spread).

Bake 15-20 minutes until edges just begin to brown. Cool on wire racks.

Makes 30 to 36 cookies.
