Default Fried Okra

Fried Okra

1 Lb fresh okra sliced up
1 cup flour
1 cup cornmeal
salt and pepper
5 eggs, beaten
cooking oil

Heat about 1/4-inch of cooking oil in a frying pan. Combine flour
and cornmeal and season with salt and pepper to taste. Dredge okra
in beaten eggs, then dredge in flour-cornmeal mixture. Place okra
in heated oil and fry on medium heat until golden brown. Stir
occasionally so all sides get browned. Drain on paper towels.
Dust with paprika if you like.

Sounds good, but 5 eggs seems like a lot...

My family has ethnic-themed dinners once a year, and a few years ago, we chose recipes for a 5-course menu from the giant continent of Africa.

Two of my favorite dishes were fried whole okra pods and fried fava beans. I was surprised to see that all the other recipes posted for fried okra called for slicing the pods.

I can't find the recipes (at least I THINK they're whole pods!) but here's the picture. SO good!

(hey, Keltin and Mama, am I forgiven for not liking corn bread if I like fried okra? :-) )
