Peep's Beef Lo Mein

≈ 4 - 5 servings




Meat:
  • 1/2 lb. boneless Chuck steak - sliced into thin and narrow strips
  • 2 medium (≈1/2 tsp) cloves fresh Garlic - pressed, grated or minced fine
  • 1/2 tsp fresh ginger - grated or minced fine
  • 1/2 tsp Sea salt - or to taste
  • 1/2 tsp Ground pepper - or to taste
  • 1/2 tsp Fermented black bean paste
  • 1 tsp Cornstarch
  • 1 TBSP Canola oil
  • 1 tsp Sesame oil
  • 3 drops Hot Chili Sesame Oil
  • 1 tsp soy sauce
  • *1/8 tsp AP seasoning blend (see note below)
  1. Add all ingredients to bowl.
  2. Toss well to combine and allow to marinate.
Veggies:
  • 2 large cloves Fresh Garlic
  • 3 Shiitake dried black mushrooms - (≈1/2 cup - rehydrated)
  • 3 Scallions (≈1/3 cup)
  • Small Onion (≈1/3 cup)
  • 1/2 cup Fresh Snow peas
  • 4 medium White Button Mushrooms (≈1 cup)
  • 1 medium Carrot (≈2/3 cup)
  • 1 cup Fresh bean sprouts
  1. Cover dry mushrooms with hot water and allow to sit for at least 1/2 hour to rehydrate. Drain and squeeze excess water out of mushrooms before using.
  2. Vegetables should be cleaned and sliced into thin julienne strips.
  • 2 TBSP Canola oil - divided
  • 1 tsp Sesame oil
  • 3 drops Hot Chili Sesame Oil
  • Sea salt - to taste - optional
  • Ground pepper - to taste - optional
  • 2 TBSP Soy sauce - or to taste
  • 123g dry Chinese noodles (≈1/4 of a 14 oz bag) - cooked and drained
  1. Heat large cast iron pan (or wok).
  2. Add 1 TBSP canola oil to pan.
  3. Add meat and stir fry till 3/4 cooked
  4. Move meat to sides of pan
  5. Add remaining oils to pan
  6. Add garlic to pan and allow to cook till fragrant
  7. Add all veggies EXCEPT bean sprouts
  8. Stir fry till tender
  9. Add bean sprouts and cooked noodles to pan
  10. Add soy sauce; stir fry till well mixed
Serve and garnish with scallions and toasted sesame seeds if desired.

*My all purpose seasoning blend - Garlic powder, Onion powder, Goya Adobo Seasoning, Accent, Sea Salt, Hungarian Sweet Paprika, Hungarian Hot Paprika, Ground red pepper flakes, Cayenne, Ground peppercorns,

I reuse an empty shaker bottle to mix this in. Add each spice to your personal taste preferences.
WARNING: Go easy on the last 4 spices or it will be very HOT.

Ding....another winner!

I made a cheater mandarin beef lo mein the other night. It was pretty good. :hide2: I used Panda Express Mandarin Sauce that I bought at the grocery store.

Yup Lee. Long prep and quick cook. Actually the noodles took longer to cook than the meat and veggies.
