This is SO easy and so good! Had it tonight with leftover barbecued pork from last weekend.

1 1/2 pounds pulled pork
2 T. oil
1/2 cup diced onion
2 cloves minced garlic
4 cups chicken broth (preferably unsalted, if you've used a rub on the pork)
1/4 teaspoon cumin
1 teas oregano
28 oz can white hominy, drained
4 oz can green chiles
Saute garlic and onion in large pot.
Add pulled pork. Stir in chicken broth, oregano, and cumin. Bring to boiling, then reduce to simmer for 30 minutes.
Add hominy and green chiles, and simmer for 30 more minutes.
Garnish with toppings of shredded cheese, chopped cilantro (or parsley), diced avocado, green onions, crushed tortilla chips.
