Quick note:
To be sure the frying oil is ready... dip the handle of a wooden spoon in it... if it sizzle then the oil is ready.

My version:
2 Tablespoons sugar
2 tablespoons butter
1/2 cup warm milk
1/4 teaspoon vanilla
pinch of salt
2 eggs
1 teaspoon dry yeast
2 cups flour

Make a dough easy to handle. The dough should be not too hard but not too soft either. Help with a little liquid or flour if necessary.
Cover the dough and let rise 1 - 1/2 hours in a warm place.
Pat the dough down with your hands and then roll to 1/2 inch thick.
Cut into circles, cover and let rise for 30 minutes or until double in size.
Fry in preheated oil until golden brown on each side.
After cooling fill with cream or fruit preserves.
