Grilled Zucchini

Grilled Zucchini

1 large zucchini
1 TBL minced garlic
1/4 c. red wine vinegar
1 tsp. salt
1/2 tsp. celery salt
1/2 tsp. white pepper
1/4 tsp. cayenne
1/4 tsp. dry mustard
Dash Sriracha
3/4 c. vegetable oil

Slice zucchini (do not peel) in to 1/4 inch slices; place in a large bowl. Cover and refrigerate till ready to coat.

In a mixing bowl, mix everything but the oil. Slowly add the oil, stirring constantly with a whisk.
Let stand 10-15 minutes, then pour over the zucchini slices.
Toss well to coat the slices.
Refrigerate for 1/2 hour to allow the slices to absorb the flavor of the marinade.

Remove slices from the marinade and place on a hot grill and grill about 2 to 3 minutes per side,
or until nice grill marks appear and the zucchini is slightly limp. Serve.
