Spicy Beef and Noodles

1 pound lean ground beef
1/2 cup diced red bell pepper
1/2 cup shredded carrots
2 garlic cloves, minced
2 teaspoons grated fresh ginger
1 cup beef broth
1/4 cup peanut butter
2 tablespoons soy sauce
1/2 to 1 teaspoon dried crushed red pepper
8 ounces vermicelli, cooked
1/4 cup sliced green onions
2 tablespoons sesame seeds, toasted
Chopped peanuts (optional)


Cook beef in a large nonstick skillet over medium-high heat until beef is browned. Drain.

Add red pepper and next 7 ingredients and sauté 6 to 8 minutes or until vegetables are tender.

Toss beef mixture with hot pasta, green onions, sesame seeds and chopped peanuts, if desired. Serve immediately.

HC, neat recipe. I love tha PB and the soy sauce! Both of those are also good in Chili... Shhh. Oh, and so are carrots! But, we call that Chili Stew... here in Texas. :~)
