Buttermilk Pie

After I made two loaves of Irish Soda Bread yesterday I had some buttermilk left over, so this is what I did with it. Excellent use of leftovers!

1 1/3 cups sugar
3 tbls. flour
2 beaten eggs
1 stick of butter (1/4 cup) melted
1 cup buttermilk
2 tsp. vanilla
1 tsp. lemon flavoring or flavoring of choice
1 unbaked pie shell or pastry of choice

Preheat oven to 350 degrees F.
Line pie pan with crust. Flute edges and keep chilled until ready to use.
Combine all other ingredients and pour into pie shell.
Bake for 45 minutes - do not open oven door during baking time. :a1:

This is absolutely to die for!

I never buy buttermilk, because I don't know what to do with the leftover (and heaven forbid I throw any food away!).

Now I know!

I wish they would sell buttermilk in little pint or half pint cartons the way cream and Half and Half is sold!
