4 slices white bread, toasted
6 tablespoons cream cheese
2/3 cup finely chopped walnuts, toasted, divided
2 ripe pears, quartered, cored and very thinly sliced
2 tablespoons aprocot preserves
1 teaspoon lemon juice
Spread one side of each slice of toast with about 1-1/2 tablespoons cream cheese. Set aside about 2 tablespoons of toasted walnuts to yse as a garnish, then sprinkle remaining walnuts over cream cheese. Cut each slice of toast into quarters.
Arrange pear slices in a decorative fashion over the walnuts on each quarter.
Place preserves in a small microwave-safe bowl. Microwave on high (100% power) about 10 to 15 seconds or until preserves are melted. Stir in lemon juice. Lightly brush the top of the pears with preserves mixture. Garnish with reserved walnuts.
Tip: Toasting the walnuts intensfies the flavor and causes the flavor to "pop" To toast walnuts, spread walnuts in a single layer on a baking pan. Bake at 350 degrees about five to seven minutes or until goldon.
