Cajun-Style Brown Rice

Cajun-Style Brown Rice

1 medium Vidalia onion - chopped
3 garlic cloves - finely chopped
1 large bell pepper (green or red), cut into 1/2" pieces
2 1/2 cups chicken stock
5 scallions - finely sliced
1 cup brown rice - long grained
3 Italian plum tomatoes - cored, seeded, chopped
1/4 pound hot sausage, skin removed
1/4 teaspoon white pepper
1/4 teaspoon black pepper - fresh ground
3/4 teaspoon cayenne pepper
1/2 teaspoon cumin
1/4 teaspoon allspice
1/4 (or more) pound shrimp - peeled and deveined
1/3 tsp Tabasco sauce
1/4 cup parsley,fresh, chopped
In a large pot or Dutch Oven, saute the first three ingredients in 1/4 c. of the stock for 3-5 minutes. Adjust heat to med.-Low; Add two-thirds of the scallions, the rice, and tomatoes, and cook for 5 minutes, adding a little more of the stock if necessary. Add the sausage, the three peppers, cumin, allspice, and the remaining stock, and cook on very low heat, covered for 40 minutes. Add the shrimp and cook for 2 minutes.
Add the Tabasco sauce; Taste and adjust spices, if necessary.
Garnish with parsley and the remaining scallions and serve​
