Okra Casserole

6C okra, cut up
3 eggs
1 1/2C hushpuppy mix with onions
1 1/2tsp black pepper
1 1/2C milk
12Tbsp cooking oil
1 1/2tsp salt

Mix all ingredients together & pour into a greased 9X13 in baking dish. Bake at 375F for 45-60 minutes, or until browned. Cut into squares to serve.

Oooooooo, crewsk! I love okra and want to try this!

If I can't find hushpuppy mix, what could I use instead?

I take it that you use fresh okra, not frozen. Not slimy after being cooked?

Sorry it has taken me so long to get back to you QSis!

I do use fresh okra, & it's not slimy at all, it's like a really moist cornbread with okra in it. In place of the hushpuppy mix, you can use cornmeal mix & just add some fresh chopped onion to it.

Cornmeal Mix

You can easily make your own mix.
1 cup corn meal
1 cup
1/2 tsp salt
4 tsp baking powder
Mix and store in a covered container for up to 6 months.

No problem Lee! Yes, that's the one I mean, but Mama is right, you can also make your favorite cornbread recipe adding onions & the okra to it. Sorry, I was slow this morning, the coffee had not kicked in yet.

Okay, so a packaged cornbread mix, like Jiffy, would be okay? And add onions.

Jiffy is a sweet cornbread, so it just depends on whether you like your cornbread/hushpuppies sweet.
