Buttermilk Pie

1 (9−inch) pie shell, baked
3 rounded tablespoons flour
1 1/2 cups granulated sugar
1/2 teaspoon salt
1/2 cup butter, melted
3 eggs, slightly beaten
1 cup buttermilk
1 teaspoon vanilla extract
Nutmeg, to taste
Cinnamon, to taste
Mix flour, sugar and salt; add to butter. Add eggs, buttermilk and vanilla. Mix and pour into pie shell;
sprinkle with nutmeg and cinnamon. Bake at 350 degrees F for 50 minutes. Test with knife. It should
come out clean when pie is done.

I had some leftover buttermilk from my Irish Soda Bread so looked into my recipe archives.

Found this recipe, which is very similar to Lucky's, but uses Bisquick to form a thin crust on top of the custard.

Had all the ingredients, so whipped it up - very easy!

It's really tasty, but too sweet for me. Will give it (minus one slice) to my neighbor friends.

I bet it would be awesome with a strong lemon flavor!

Olivia's Buttermilk Pie

1 1/2 cups sugar
1 cup buttermilk
1/2 cup biscuit mix (recommended: Bisquick)
1/3 cup (5 1/3 tablespoons) butter, melted
1 teaspoon pure vanilla extract
3 eggs

Preheat oven to 350 degrees F. Grease a 9-inch pie pan.

Put all ingredients in a bowl and blend for 1 minute with a handheld electric mixer. Pour mixture into prepared pan. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes.
