Oatmeal Raisin Pudding Cookies

1 1/4 cups of all-purpose flour
1 cup of butter, softened
1 teaspoon of baking soda
3/4 cup of light brown sugar
1/4 cup of sugar
1 (4-ounce)package ofinstant pudding (I like to use banana cream or vanilla)
2 eggs
3 1/2 cups of quick cooking oatmeal
1 cup of raisins
1 cup of chopped walnuts (optional)


Preheat oven to 375 degrees F.

In a medium bowl, combine the flour and baking soda. Set aside.

In a large mixing bowl, cream together the softened butter, sugar, brown sugar and pudding mix.

Add eggs, one at at a time, mixing well after each egg.

Gradually add the flour. Mix well.

Add the oatmeal, raisins and nuts.

Mix well. The batter will be stiff.

Drop by rounded spoonful onto baking sheet making sure that each cookie is about the same size.

Bake at 375 degrees F. for 10 to 12 minutes. Cool on a wire rack.

Oh WOW! Now that looks fantastic. I'm gonna try this. I'm not a baker, but I strill gotta try! :lol:

Mama... (don't hit me...) but leave out the raisins and we would be good!!

You can leave the raisins out if you want...you can even put sugar in your cornbread...I'm easy to get along with...:flowers:
