Free range chicken in Parma ham with Mushrooms

My hubby makes this..it's awsome & not fattening, I love the flavours mingled together, hope you like it :tiphat:

Free range chicken in Parma ham with Mushrooms

Prep Time 10mins
Cooking Time 30 mins
Ingredients

  • 2 Free range chicken breasts
  • 4 Rashers Parma ham
  • 6oz/170g Mushrooms (thinly sliced)
  • 2 tsp Whole grain mustard
  • 2 tsp Extra virgin olive oil
  • Salt and freshly ground black pepper
Method

  • Use enough aluminium foil to create a parcel for each chicken breast
  • Spread 1 tsp of extra virgin olive oil on each piece of foil
  • Lay 2 rashers of parma ham side by side on each piece of foil
  • Spread 1 tsp whole grain mustard over the parma ham
  • Lay the chicken breast on top of the ham, cover with mushrooms and season with salt and freshly ground black pepper
  • Fold the foil over the top to form a parcel and seal
  • Place in a pre heated oven 220°C/425 °F/gas mark 7 for 20 minutes, open the parcel and cook for a further 10 minutes
  • Serve with roasted vegetables

Lesley, I made this tonight - it is SO simple and SO delcious! I can't believe how moist the chicken breast is!

LOVED the flavor of the mustard on it, too!

I sprinkled mozzarella cheese on the chicken before putting the mushrooms on top - great!

I served it with sauteed Rainbow Swiss Chard (with garlic and red pepper flakes). Wonderful dinner!

I'm glad you enjoyed it!
You know, I don't actually like mustard, but Baz made this without telling me there was mustard in it :whistling:... & I loved it too, the ham keeps all the juices in the chicken & we're gonna try it out on the BBQ at the weekend :chef: putting the mozzarella on top yummo!
