Bam's Red Bean & Sausage Soup

1 lb dried red beans
3 slices bacon,chopped
8 oz Bam's Habanero Sausage http://www.netcookingtalk.com/forums/showthread.php?t=3949
3 garlic cloves,chopped
1 1/2 cups finely chopped onions
1 1/2 cups chopped carrots
1 small ham hock
1 bay leaf
7 cups chicken stock(approx.)
1/2 tsp. dried oregano
1/2 tsp. dried thyme
3 tbls. dry sherry
S&P
chopped green onions
sour cream

soak the beans overnight or you can quick soak them

in a large saucepan,cook bacon for about 3 minutes, then add sausage and cook. breaking into chunks until lightly browned,about 5 minutes.once cooked, transfer to a bowl and set aside.

pour off all but 1/4 of the fat from the saucepan.

to the fat in the saucepan, add garlic,onions and celery. saute for about 5 minutes until tender.add beans,ham,bay leaf,stock,oregano and thyme, conver and simmer for 1 - 1 1/2 hours or until beans are tender. discard bay leaf

transfer ham to a plate and let cool slight. remove meat from the hock and cut into bite sized pieces.set aside meat

this next step is optional, you can run the soup(stock) through a mesh strainer, but i dont generally, i just put my immulsion blender in and give a few swirls

add the rest of the ingredients and simmer for about 5 minutes. if needed, thin with some more stock.

ladel into bowls and garnish with green onions(scallions) and a dollup of sour cream.
