Savory Blood Orange Sorbet

i dont do desserts that often.. i am a meat and veggies kind of guy but Mrs.Bam likes this one

1 3/4 cup water
1 1/2 cup sugar
Zest of 1 blood orange
1 sprig rosemary
1 cup blood orange juice - approximately 4 - 6 blood oranges, depending on size
1 teaspoon lime juice

Directions

To begin, create a simple syrup by pouring 1 1/2 cups of the water into a saucepan (reserve remaining 1/4 cup of water).

Slowly pour in the sugar, centering it in the pan. Do not stir the sugar into the water. If you do stir, sugar crystals will attach themselves to the side and fall back into the syrup, creating a gritty texture.

Add the blood orange zest. Over medium-high heat, allow the sugar to dissolve into the water completely. Bring to boil, and remove from heat.

Pour off one cup into another large saucepan. Add rosemary sprig and return to heat. Bring back to simmer, and let simmer for approximately 5 minutes to really infuse the rosemary flavor into the syrup.

Remove from heat and allow to return to room temperature.

Once the syrup has cooled, strain the syrup to remove the rosemary sprig and zest.

Add the blood orange juice, remaining 1/4 cup water, and lime juice.

Add to your cuisinart ice cream maker and allow to freeze.

If you do not have an ice cream or sobet machine, pour syrup into a deep sided baking pan.

Place in freezer. Monitor juice, and as it begins to freeze, periodically scrape the mixture using a fork to break up the crystals.

Continue this until you have developed a sorbet consistency.

Serve with a sprig of rosemary and a crispy sweet cookie.
