Smoked Spring Ham

I realize it's the heart of summer, but this is too good to wait to share till it's actually spring again. If you enjoy a good ham, I must warn you to grab a napkin now because you will need it to wipe off your keyboard in a second:

GF, this looks fantastic!

I've been double-smoking ham this way for years, using Dr. Chicken's basting glaze the way you used your glaze.

The glaze recipes are very similar - I'll post both here for comparison.

I like the apple pie spice and soy sauce in your glaze! Interesting.

Dr. Chicken’s Glazing Sauce for Double Smoked Ham:

½ cup brown sugar
¼ cup maple syrup (use dark grade B real maple syrup if available)(dark grade B has more flavor than grade A)
¼ cup honey
2 Tbsp cider vinegar
1 – 2 Tbsp Worcestershire sauce
2 Tbsp instant coffee granules (use a good brand because it makes a difference)
1 Tbsp dry ground mustard
2 Tbsp orange juice concentrate (a good brand provides better flavor)

Blend all ingredients in a sauce pan with a wire whip and heat slightly until everything combines into a viscous or thick looking sauce.


Grillin’ Fool’s Basting Sauce Ingredients for Smoked Spring Ham:
1 cup apple juice
1 cup apple cider vinegar
1 cup honey
2 tbsp soy sauce
½ tsp apple pie spice
½ tsp white pepper
¼ tsp jalapeno powder
1 cinnamon stick
This basting sauce sounds too good to screw up.

Instructions:
  1. Preheat stove for medium-low heat.
  2. Mix all ingredients in sauce pan and place on stove.
  3. Take off the stove once all the ingredients are blended.
