Asparagus Fries

'Tis the season for asparagus on sale, and I've been eating it every week.

I love it most simply steamed, with butter, s&p. But thought this recipe looked interesting (again, a supermarket flyer).

It was good, easy, and would be great if your kids hate asparagus.

I still prefer steamed.

Asparagus Fries

1 bunch of asparagus
½ cup flour
2 eggs, beaten
1 cup panko bread crumbs
½ finely grated parm. cheese
S & P
Cooking spray

Sauce: ½ cup mayo mixed with ½ cup Dijon mustard

Preheat oven to 450 degrees
Trim ends of asparagus.
Prepare 3 shallow containers: 1 for flour, 1 for beaten eggs, 1 for panko combined with parm cheese and seasoning.
Prepare 2 cookie sheets with parchment paper.
Spray asparagus with cooking spray (or toss w/olive oil if you prefer). Dredge spears in flour, then egg, then panko. Place spears on sheets, spacing them, and put in oven.
Check in 15 minutes. Spears should be golden and asparagus tender.
Serve with dipping sauce.
