This was such a wonderful day.
After Red Lobster we went exploring Toledo.
Old pubs, the Mudhens stadium..

DD roasted potatoes and corn on the cob.

City Chicken - I love it. My in-laws made that with an incredible gravy for special occasions. I haven't had that since my f-i-l passed away.

Hub and I had the last of the meatballs from the freezer over Colavita Mezzi Rigatoni #31b (small sewer pipes as mom called them) topped with fresh grated Parmigiano Reggiano & Pecorino Romano cheeses.

Yes, it has capers and I'm not wild about them.

I made another old standby. Chicken Apollo.


A bed of spinach sauteed with shallot, pancetta, and garlic; topped with chicken breast, fontina cheese, sauteed mushrooms, and crispy pancetta. The whole pile is drizzled with a rosemary balsamic glaze. It's a favorite of ours.

When I take a picture with my phone it usually comes out in wrong direction if I just post it.
I need to save to my desktop then open it and rotate in Paint Shop Pro till it's in the proper direction. Then it will post properly.
