Blondie's Meatloaf With Gravy

Loaf:
3 T oil
1 large sweet yellow onion
1 bell pepper-chopped
3 lbs ground beef
1 c fresh bread crumbs
3 eggs, slightly beaten
1 can cream of mushroom soup
3 T worcestershire sauce
salt and pepper

Gravy:

1 small yellow onion-chopped fine
2 cloves garlic-minced
2 cups sliced crimini mushrooms
2 cans of golden mushroom soup
1 can of beef broth

Preheat oven to 350.
Heat 3 T oil in skillet. Add onion and bell pepper, saute for 2 minutes on medium-high heat.
Remove from heat and set aside to cool.

In a large bowl, mix beef, eggs and bread crumbs.
Add soup, worcestershire and salt and pepper, then finally onions and pepper.
Place mixture in a 13x9 baking dish leaving a slight gap around the edges.
Bake for 1 hour.

While meatloaf is cooking, make the gravy-

In same skillet, saute onions til soft. Add garlic and cook a minute longer.
Add mushrooms and cook until skillet dries out and mushrooms brown.
Add mushroom soup and broth to skillet and heat til bubbly.
Turn off heat and cover to keep hot.

Drain fat off meatloaf when done, pour gravy over and return to oven for 20 minutes.

I plan on making it this weekend sometime Lucky, with mashed taters and corn.
The recipe will be halved, so I'll have a smaller loaf ;)

I love this recipe!
It's a keeper.
The meatloaf is very moist and the gravy is out of this freaking world!

I was looking for something new for meatloaf and think I just found it. Your recipe is very similar to mine sans the mushroom gravy. I love jeager gravy so will have to give yours a try next time.

Johnny, looks fantastic, but then again, I'll eat most anything with that much bacon on it! :)

Hey Sass, when you make your meatloaf with gravy, how many pounds of burger do you use? Do you decrease any amounts?
