Chicken Fried Steak and Gravy
4 pounds (6 pieces) Round Steak -- 1/2-inch Thick
1 cup Milk
1 cup Flour -- unbleached
1/4 teaspoon Black Pepper
1/4 teaspoon Salt
Milk
4 tablespoons: Fat
4 tablespoons Flour -- unbleached
1 quart Milk
Tenderize the steaks. Dip in milk & then flour, salt & pepper to taste. Fry in deep fat (about 375 Degrees F.), turning once, until golden brown.
For the Gravy;
After steak is done, pour off fat, leaving about 4 TBL in skillet.
Add 4 TBL flour. Stir until smooth. Slowly stir in 1 qt milk. Stir & cook
until thickened
