Potato Chip Cookies

Has anyone ever made these? This recipe came from a mother of a friend, so it is pretty old(!) Our friend brought these to Jerry when he was sick last week, and we think they are delicious. The recipe is unusual (no eggs, no leavening), and you would expect them to taste like shortbread, but they don't; the crushed potato chips give them a very light texture. Of course, each cookie is a cardiac bomb, so enjoy in moderation:

POTATO CHIP COOKIES

Cream well 4 sticks butter
1 cup sugar

Add: 3 1/2 cups flour
3 teaspoons vanilla
1 cup coarsely crushed potato chips

Drop by teaspoon onto ungreased cookie sheet.

Bake @ 350 F for 12 minutes.

While warm, sprinkle with powdered sugar.

The amazing thing about these cookies (I just ate another one) is their texture. Light and flaky because of the potato chips I guess. And BUTTERY. I'll bet they are at least 100 calories each...bad bad bad. But soooooooooo goood.
