Southern Fried Cabbage

I cooked this recipe a couple of weeks ago and it was very good. Some of you might want to use this as a guide for your St. Patrick's Day meal.

SOUTHERN FRIED CABBAGE
Serve 4

4 Strips Bacon
1 Head Cabbage, small, sliced
12 Cup Onion, diced
1/4 Cup Chicken Broth, low sodium type
Salt and fresh ground Black Pepper, to taste

Fry the Bacon in a large cast iron skillet until done and crisp. Move to a paper towel to drain.
Place chopped Cabbage and Onions in the skillet with the Bacon Fat over medium heat
and cook until it begins to wilt a bit.
Crumble the Bacon and add to the pan.
Add in the Chicken Broth, Salt and Black Pepper, cover and allow it to simmer for 10 minutes. Do Not overcook the Cabbage. Serve hot.


Note:
Chopped Apples, cooked smoked Sausage, or other items may be added for additional flavor.
