the Mrs.Bam wanted to eat something quick and easy last night so i came up with this.its probably not original but it is actually pretty good and not bad for you health wise
1 lg box of chicken stock
1-2 cups of water
1 large boneless skinless chicken breast - cubed
1 small carrot (i use about 20 baby ones)sliced thinly
1/2 head roasted garlic
small onion (i used 2 spring onions)
i small bag of frozen cheese tortellini's (1 lb) or frozen meat tortellini's
lots of Mrs. Dash Original Seasoning
fresh black pepper
- season your chicken with a generous amount of mrs.dash.
- cook your chicken in a little bit of olive oil in a big pot.
- when chicken is done, remove and then add the carrots to the same pot and saute for about 3 minutes.
- add the roasted garlic and mash the garlic in the pot
- add a little bit of chicken stock to deglaze the pan.
- add the remaining stock and water, bring to a boil
- add tortelli and cook until tender
- when tortelli are finished add chicken,spring onions and cook for another 4-5 minutes
