Feta Spread

1 lb feta cheese
1 c. soft unsalted butter or margarine
1 sm. onion, minced very fine
1 tsp. paprika
1 TBL caraway seed
Using your food processor,
Mince the quartered onion with 2-3 pulses.
Scrape out the onion and set it aside.
Crumble the feta by pulsing it 2-3 times.
Add butter and cream until very smooth. Add the paprika and cream until well blended. You may have to scrape the sides once or twice during the process.
Add caraway seeds and onions and pulse 2-3 times to just mix. Scrape it into a wide-mouth sealable container and refrigerate it.
When ready, serve with your favorite rounds.

This spread can be stored refrigerated for up to 3 weeks.

note; The spread may be a little runny when it's first made, but will firm up in the refrigerator.

Yes, I KNOW it would also be delicious on pumpernickle toast points or pita wedges, but I'm trying to be lower carb!
