Good brine recipes for turkey?

I have a couple of my own, but I wanted to hear if anyone had any good turkey brine recipes to share?

Also feel free to include dry rub and injections recipes as well! : )

In the meantime, I don't brine poultry because a) I always cook it hot and fast, and b) I don't like the texture of it (too soft and wet).

Are you going to deep fry the turkey? If so, brining is not necessary, since the bird cooks so fast, it would never have a chance to dry out. Also, the increased moisture would make the oil bubble and spit way too much.

When I am cooking a turkey or a turkey breast outside, I do like to inject and rub it.

I like Tony Cachere's for a rub, and Cajun Injector Creole Butter for an injection.

If you want to make your own injection, here's a good one"


SCOTTIE'S CREOLE BUTTER

- ½ can of beer
- ½ lb. Butter
- 1 tsp. Bonesmokers Big Time BBQ Rub
- 2 tsp. Paprika
- 1 ½ tsp. White Pepper
- 1 ½ tsp. Sea Salt
- 1 tbsp. Garlic Powder
- 1 ½ tsp. Onion Powder
- 1 tsp. Coleman?s Mustard
- 1 tsp. Ground Black Pepper
- ½ tsp. Cayenne Pepper
- ½ tsp. Tabasco
- Warm butter in sauce pan and add spices. Let cool, inject...

INJECTED BARBECUED TURKEY OR CHICKEN

INJECTION MIX

1 cup(s) ORANGE JUICE; Or Sunny Delight.
1/2 cup(s) BROWN SUGAR; Packed.
1/4 cup(s) SOY SAUCE
1 cup(s) BARBECUE SAUCE; Sweet Baby Rays Hot/Spicy Is Great.
1/4 cup(s) BUTTER
1 tablespoon(s) WORCESTERSHIRE SAUCE
1 teaspoon(s) ONION POWDER
1 teaspoon(s) GARLIC POWDER
1/2 teaspoon(s) BLACK PEPPER; Fine Ground.
1/2 teaspoon(s) CAYENNE PEPPER; Or More.

BBQ SEASONING

2 tablespoon(s) SALT
2 tablespoon(s) BLACK PEPPER
4 tablespoon(s) SUGAR
2 tablespoon(s) CHILI POWDER
2 tablespoon(s) GROUND CUMIN
4 tablespoon(s) PAPRIKA

MEAT

1 TURKEY; Or Chicken, Whole.

Put all marinade ingredients in a microwave proof container or sauce pan.
Heat in microwave until butter melts completely.
Mix together well, fill injector.
Make injections about 1" apart, repeating until entire turkey or chicken is injected with marinade.
Don't skimp, the more you inject it the more flavorful and juicy it will be.
After injecting, season outside of meat with the BBQ seasoning.
Place meat on the grill and cook until done.
Remove from grill, set aside and cover with foil for 15 to 20 minutes before carving.

That turkey does look very good!

And yes I do plan on deep-frying, that is what I almost always do!

I usually brine before I deep-fry because I feel like it adds even more flavor and texture to the turkey. What's wrong with making something good even better? :)

Here is a really good brine recipe I like to use:


  • [FONT=&quot]12 cups water, divided[/FONT]
  • [FONT=&quot]1 cup kosher salt[/FONT]
  • [FONT=&quot]2 cups sugar[/FONT]
  • [FONT=&quot]1 cup apple cider vinegar[/FONT]
  • [FONT=&quot]2 tablespoons sage[/FONT]
  • [FONT=&quot]2 tablespoons thyme[/FONT]
  • [FONT=&quot]2 tablespoons rosemary[/FONT]
  • [FONT=&quot]1 tablespoon pepper[/FONT]
  • [FONT=&quot]4 cups ice[/FONT]
Perfect for fall with the apple cider and savory herbs!
