3 Tbsp olive oil
3 Tbsp butter
1/2 cup each of chopped celery, onion and carrot
3/4 to 1 lb of ground beef
1/2 dry white wine or red wine
2 cups of canned chopped tomatoes (I use the roasted garlic kind)
1/2 cup of half & half
1/4 tsp nutmeg
2 garlic cloves
1 Tbsp of either oregano or Italian seasoning, whichever you prefer
salt & pepper to taste
1/4 tsp of red pepper flakes (optional)
Take the celery, onion, carrot and put in a food processor or blender until chopped. Add the garlic cloves and process until fine dices.
In a large saucepan, head the olive oil and butter on high heat. Add the blended vegetables and cook for 2 minutes, stirring constantly until they have begun to sweat - DO NOT BROWN. Reduce heat to medium-low and add the ground beef. Continue to cook until the beef has just lost it's raw color. Add the wine and turn up the heat to cook off the excess alcohol. Add the half/half, nutmeg and herbs (also red pepper flakes if you are using them). When the half/half has reduced by half, lol - add the tomatoes and their juice. When the sauce begins to bubble, lower the heat to low and simmer, covered for 45 minutes. Adjust the seasoning to your taste and there you have it!
