Tomato Basil Bread

For the bread:
2 ½ cups of All-purpose flour
1/3 cup of grated Parmesan Cheese
1 tablespoon of sugar
3 teaspoons of finely diced spring onions
1 teaspoon of baking soda
2 tablespoons of fresh chopped basil
½ teaspoon salt
1 cup of sour cream
1/3 cup of milk
1/3 cup of sun-dried tomatoes in oil chopped
¼ cup melted butter

Topping:
1 egg white
2 tablespoons of grated Parmesan cheese

For the spread:
½ cup of butter, softened
2 tablespoons of Parmesan Cheese
1 teaspoon of Italian Seasoning

Heat oven to 350 degrees F.

Combine the first 7 bread ingredients. Mix well.

Add the sour cream, milk, tomatoes and melted butter. Stir just until moistened.

Turn out onto a fairly heavily floured surface and knead about 10 times. Divide dough in half and form each half into a 4 ½ inch round loaf.

Grease a baking sheet and place the loaves on the baking sheet about 3 inches apart. Brush the top of each loaf with the egg white. Sprinkle with the Parmesan Cheese. Cut an X into each loaf about ½ inch deep.

Bake for 30 to 35 minutes until lightly browned. Remove from baking sheet and cool completely before cutting.

While the bread is baking, combine the spread ingredients.

Thanks Lefty. It's not a real sweet bread...it kinda reminds me of a really BIG biscuit. :lol:

diabetes or not I AM TRYING THIS!! I have everything but the dried tomatoes. I have a bunch of small vine tomatoes.

That looks like a keeper. btw, I often sub roasted red peppers for sun-dried tomatoes in recipes - I don't care for the texture.
