Chipotle Meatballs

1 pound ground beef
1/2 cup plain bread crumbs
1 large egg, beaten
2 tablespoons finely chopped fresh parsley
3 tablespoons granulated beef boullion
2 tablespoons vegetable oil
1 can (14 ounces) tomato sauce
1/2 cup water
2 chipotle chiles in adobo sauce from a can, seeded and finely chopped
2 teaspoons canned adobo sauce from the chipotle chiles
Hot, cooked rice

Mix beef, bread crumbs, egg, parsley and one tablespoon beef granules in large bowl. Shape into balls.

Heat oil in large skillet over medium heat. Cook meatballs on all sides until browned.


Add tomato sauce, water, chiles, adobo sauce and remaining 2 tablespoons beef granules; bring to a boil. Reduce heat to low; cover. Cook for 10 minutes. Uncover; cook for an additional 10 minutes. Serve over rice.
