Steak with a Red Wine Sauce. Barley spinach side.

olive oil
1 large onion
4 cloves garlic chopped ( more if you want)
3.5 cups beef broth
1 cup barley
1 ounce dried mushroooms (can use fresh)
2.5 teaspoons fresh rosemary chopped small
salt and pepper to taste
flour
3 boneless steaks (cuts of your choice)
Garlic powder
Onion powder
1 cup red wine
4 cups cleaned spinach (either use baby spinach or cut the larger leaves of reg. spinach in half)
1/2 cup shreaded parmesan cheese.

In a large pan warm some olive oil and add half of the chopped onion.
Cook until soft.
Add garlic. Cook until soft but not brown.
Add beef broth
Add mushrooms
Add barley
Add pepper to taste.
Bring to a boil... lower your heat and cover. Cook until the barley is nice and soft and all the broth is gone. 40 minutes or so. Keep an eye on it. You may have to add some extra broth.

When this is cooking....

Sprinkle meat with salt, pepper, onion powder and garlic powder.
Dust with flour.

Add some olive oil to a fry pan and fry up your steaks. Just until brown on
each side.

Remove meat from pan and add the other half of your chopped onion.
Cook until soft. ( Feel free to add more chopped garlic now too)
Add red wine
Add salt
Add pepper
Be sure to scrape up all the brown bits stuck to the pan.
Reduce sauce by half.
Add meat and cook 3 minutes on each side.

When barley is soft add spinach and mix well, continue mixing until
spinach is wilted.
Add cheese. Mix well.

Make a mound of barley in the middle of your plate
Top that with the sliced meat and pour the wine sauce over the
meat!

I've never had barley before except in soup, but this recipe makes me want to try it. Thanks, Trish!

nice recipe, lll. beef, barley, and shrooms are a classic combo, and changing things up a bit by using steak is a great idea. copied and saved, thanks!

Lilylove's spinach and barley recipe looks absolutely spectacular!

What I grew up on, and what was my mother's favorite side dish, is just this:

Joan's Spinach and Barley

Cook some spinach until just done
Cook some pearl barley until soft
Mix the two together. Add butter, salt and pepper
My grandfather and I sprinkle a little vinegar on this at the table.

Tip: When you cook a cup of dry barley, it makes a LOT. Use what you need for now and freeze the rest in small containers, so you can have this easy side dish in a moment.
