Beer Burger with Beer-braised onions and mushroom ketchup

This a recipe from The Burger Meister cookbook. It came out really, really good, a very nice flavor combo. Makes 4 burgers.

Beer Burger
1-1/2 pounds ground beef chuck
2 Tbsp beer, plain, not a flavored one
1/2 tsp Tabasco sauce
1/4 tsp Worcestershire sauce
salt and pepper to taste
4 slices sharp cheddar cheese

In a large bowl, thoroughly but gently mix the ground beef, beer, Tabasco, Worcestershire, salt and pepper. Divide mixture into 4 equal portions and gently form into patties about 1 inch thick. Cover and refrigerate for at least 1/2 hour before grilling.

Grill over a medium fire, 3-4 minutes on each side for rare, 5-6 minutes for medium, 8-9 for well done. Place 1/4 of the beer-braised onions on each burger and a slice of cheese. Cover grill and let cheese melt. Remove burgers.

Toast buns cut side down until toasty and golden brown in spots. Spread mushroom ketchup on bottom half of bun, top with a patty and the top part of the bun. Serve.

Beer-braised onions

1 Tbsp unsalted butter
1 large (about 3/4 pound) onion, sliced thinly
1 cup beer
1 tsp granulated sugar
1/2 tsp salt

Melt butter in a good sized skillet over medium heat. Add onions and saute, stirring frequently, until onions are very tender, about 5-6 minutes. Add 3/4 cup beer, sugar and salt. Cook until almost all of beer is gone and onions are starting to brown, about 16-18 minutes. Add remaining beer and bring to a simmer for 3-4 minutes until most of beer is gone.

Yes, this looks like a LOT more onions than you will need at first. You will be surprised at how much they cook down.

Mushroom beer ketchup
1 Tbsp unsalted butter
1 small onion (about 1/4 pound), chopped
1/4 pound mushrooms, washed, stems trimmed, and coarsely chopped
3 ounces beer
1/3 cup ketchup
1 Tbsp white vinegar
1/4 tsp granulated sugar
1/4 tsp salt

Melt the butter in a small saucepan over medium heat. Add onions and cook until tender, about 3-4 minutes. Add mushrooms and cook for another 3-4 minutes. Add the beer and bring to a boil. Remove from heat and add ketchup, vinegar, sugar and salt. Use an immersion blender and blend until smooth or pour into a blender or food processor and process. Return to heat and simmer for 12 minutes until slightly thickened. You can make this the day before and refrigerate to meld flavors preferably, or just make it several hours ahead and let it meld.
