Pork chops marinated in preserved lemons, cilantro, garlic, olive oil, then grilled. Sides were cilantro, garlic, lime rice, and a fennel and orange salad with a vinaigrette made with orange juice, white wine vinegar, honey, dijon and olive oil.

Bunless burger and a salad (TJ Sorrento blend greens, kalamata olives, green olives, bacon lardons with Ken’s blue cheese dressing).

I found a pkg of thin-sliced (1/4") Sirloin Cutlets at the market, and was reminded of Pepper Steak.... hadn't made this in ages...

DIL still hasn't been released from hospital.
My son has been there with her since 6am!

I'm exhausted, I know he is, and she's going to be groggy and feeling the pain later.

Tonight may be pizza or something fast, like spaghetti.

We had ropa vieja, maduros, black beans and rice last night.

Ohhhhhh, ropa vieja! I saw Frugal Gourmet make it years ago. I made it and we adored it! I've made his recipe several times.

Going to have to look up maduros.

Sass inspired me with the grilled pork steaks. I broke out my charcoal grill for the first time of the season for the occasion.

Grilled some asparagus, too. Corn and garden radishes (bumper crop this year!)

Maduros are ripe (black) plantains, sliced on the bias usually, then fried.

Tonight was muffaletta. I found a bread recipe very similar to what Central Grocery uses.

Cooking took a back seat here for the past 6 day's.
Dental issues with Tina mommy. Grinding and cementing to ready the new tooth, then the carrier cap fell off. Yesterday a glue job ( again ).
Today she got her new tooth. " Bucky Bucky Beaver; new Ipana Tooth Paste!"..... Brusha Brusha Brusha, I sang, whilst she waited for the lidocaine to wear off! .......:mrgreen:

We had BLTCS's.... Bacon / Lettuce / Tomato / Cheese, and Salami on light toast and mayo.

What do you have inside?

Can you post the bread recipe please.

I was going to make fluffy buns over the weekend but the muffaletta looks so good I want that instead.

We got everything organized/bedroom wise for DIL last night so late.
So we just got sandwiches.

Tonight I'm going to make a casserole and a side veg.

Green beans on the side.
Trying to keep the meal planning pleasing for everyone's tastes.

Small plates tonight.

A caprese salad with pesto. I can't believe I accidentally deleted the photo, it was so pretty.

Stuffed criminis
Rosa di mele, which is a dish I saw on a show featuring local restaurants. We intend to eat there at some point, but this looked so good I had to try and copy it. It's caramelized onions, lightly sauteed apple slices, with a gorgonzola sauce in a puff pastry shell. It was great. I served it over lightly dressed arugula.

This was fast and easy.
Ground beef, cream of chicken soup, thin sliced potatoes,onions, a few herbs, and cheeeese.

DIL loves her cheese.

My son is grilling/smoking pork butt or loin today.
I'll make sides.

This looks simple and wonderful. How did you make it?

Browned then drained the ground beef.
Thin sliced potatoes and onions layered with the ground beef.
Mixed a can of cream of chicken soup with 1/4 c of milk.
Pour that over.
Salt and pepper, a little mixed herb seasoning.
Bake 350 covered in foil 90 minutes.
Uncover, add cheese.. back in oven until cheese melts.
It's easy and very good.

We had pan fried (fresh from store not vacuum sealed) bone in smoked pork chops with baby spinach and arugula sautéed/wilted (with a small bit of all purpose seasoning) in butter and smoked olive oil to pick up chop fond.

Last night's utilization of the remainder of the Pulled Pork, over Whhite Rice, with Steamed, then Candied Carrots...


We couldn't make a Pan Gravy (No Juices left in the Pork...) so we tried a can of Campbell's Pork Gravy..... WOW! So THIN ! Nicely seasoned, tho' ...

this is "lemon zest chicken" - refreshingly simple & crisp.
season/brown chicken, remove. add (arborio)rice, chicken stock, zest of lemon, parsley, juice of 1/2 lemon. bring to boil, put chicken back, steam til rice done - roughly 25 minutes.
