ooooookay, this isn't for everyone . . .

but it works for us.
smoked ham hock
two medium onions medium dice
modest size pot, get up to a simmer
add: lots of fresh ground pepper, no salt

add after 2-3 hours:
one cup lentils
half cup barley
continue simmer about 2 hours.

drop biscuits & butter
fresh broccoli

simple is as simple does
works for me! ((urrph!))

I love ham hocks. Would try it if I had lentils and barley. Might have to look for those as I think I still have some hocks downstairs in the pork freezer.

Pork Freezer! Awesome.
I have (2) 13 cu. ft. chests in the basement. One is for pork and the other is for bird seed and dog bones and whatever we don't have room for upstairs. We have a pair of 20 cu. ft. uprights side by side in the pantry. One is for beef and chicken and the other is veggies, bread and assorted frozen stuff. We can eat for a good long while on all the grub in this place.:yum:

I like ham hocks also, though there isn't very much meat in them.

They ARE good for seasoning a variety of dishes! I also use smoke neck bones as well

The somewhat healthier alternatives are smoked turkey parts, such as wings, drumsticks, necks and tails. :weber:
