1 pound fresh okra (If you can't find fresh, frozen works just as well)
1 cup buttermilk
2 cups of self-rising flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
peanut oil for frying
Clean okra and cut into "wheels" about 1/2 inch thick. Put okra into a bowl and cover with buttermilk, turning to coat well. Let sit for at least 15 minutes.
I like to use a deep fryer for making my okra but you can use a skillet just as well. If using a deep fryer, heat oil to 350 degrees F. If using a skillet, you'll want your peanut oil to be an inch deep and heat it over medium-high heat.
In another bowl, mix together flour, salt, pepper, and cayenne pepper. Drain okra and dredge in the flour mixture, turning to coat all sides.
Carefully drop okra into deep fryer or skillet and fry until golden brown.
