So what are your plans today?
I am thinking of trying my hand at fish tacos this evening.

Here was lunch (fresh baguette, deli roast beef, horseradish/sour cream sauce, fresh chives):

Dinner may look very similar, with maybe some added watermelon on the side.

I'm heading out to do a little grocery shopping. We'll grill some bone-in, skin-on chicken breasts and add a little balsamic-pomegranate glaze. I'm also going to pick up some fresh mozzarella to make caprese salads with garden-fresh tomatoes and basil, and I'm thinking about adding some bruschetta with homemade pesto and chopped garden romas.

The fish tacos were good, but the pics suck. Oh well.

This is what I did.
Next time I will use tilapia or haddock broiled or pan fried:bonk:

battered fish tenders (3 per taco)
coleslaw mix
sliced radishes
sliced green onions
white corn and black bean salsa
sour cream
shredded colby jack cheese
1 lime

Bake fish tenders according to package directions until crispy.
Assemble 3 on large flour burrito that's been warmed.
Top with slaw, radish, onions.
Mix salsa and sour cream and spoon down center.
Squeeze on some lime juice.
Add cheese and roll up burrito style or fold in half.

Fish tacos look great, Sass!

Last night's dinner was French Dips (deli roast beef, gruyere, and caramelized onions) with a watermelon salad:

The dip for the sandwiches was made with this demi-glace (my newest love :wub:) and Swanson's beef broth:

London Broil on the grill... red wine marinade.. bourbon finish.. came perfect. I was worried... also some zucchini Made meat patties flavored with garden herbs and peppers and grilled eggplant dip for this weeks lunches.

Sass, did you not like the battered fish for your tacos? I broiled mine and loved them, but thought the next time I'd batter and fry them, as suggested by High
