Croydon Breakfast & Bed (as opposed to "Bed & Breakfast")

Home Fries;
2 slices bacon
2 tablespoons butter
1 tablespoon diced onion
4 potatoes, peeled and sliced
salt and pepper to taste
4 eggs, lightly beaten

Toppers;
chili, heated
scallions, thin-sliced
chopped bell pepper
salsa
black olives, sliced
jalapenos, seeded and chopped (I use jarred, but fresh is fine)
shredded three-cheese "Mexican" or "Taco" blend (in the dairy aisle)
Sour Cream


Prepare the toppers; (enough toppers to meet your requirements)

for the home-fries;
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, drain and crumble; leave grease in pan.
Heat bacon grease over medium heat and stir in butter. Add onion and potatoes. Cover pan and cook, stirring occasionally, until potatoes are golden brown.
Crack eggs on top of potatoes and stir gently to combine. Sprinkle with salt, pepper and bacon. Continue cooking until eggs are firm.

Divide onto two oven-proof platters;
Top each platter with the following ingredients, in the following order;

(All quantities are "more or less", depending on your personal bent)

1 cup your favorite chili
1/4 cup scallions, thin-sliced
2 tablespoons chopped bell pepper
1/2 cup your favorite salsa
1/4 cup black olives, sliced
2 tablespoons jalapenos, seeded and chopped
1/2 cup shredded three-cheese "Mexican" or "Taco" blend (in the dairy aisle)

Sit this under the broiler (or in the microwave) until the cheese is well on its way to melting........

Top with a huge dollop of sour cream and enjoy...............then back to bed !
