Last night's dinner was scallops on rice pilaf with a salad:

I put thick cut center porkchops on the grill last night over indirect heat. Added handfulls of apricot chips and smoked the heck out of them. Best I've ever cooked.

a slab of wild caught salmon and cauliflower - leek casserole.

the cauliflower - leek is the star - lightly boiled cauliflower mixed with sweated down leeks, swimming in heavy cream (reduces in the oven) topped with a crouton-Parmesan mix.

the salmon is PNW sockeye, wild caught frozen / vacu-packed - Trident brand.
you'd think it something; bought two, last slab was terrible. we'll see about this one.

I had CHILI and Texas toast.

DW is sick with a head and chest cold...so I made her 1/2 a sliced ham on white.

She fell asleep in the recliner now. I'm gonna spay her with Lysol disinfecting spray.

The house is closed and the A/C is on. The perfect Germ Distribution system. Grrrrr!!!

If seafood smells like fish, it has already begun to deteriorate. Salmon caught at the end of the run up the rivers (which I don't think the big packagers do) is not worth eating, as the fish has not eaten since it got in the river, and is preparing to die following the spawning ritual. It's great wildlife & dog food (many Alaskan mushers supplement their dog's diet with wild caught salmon), but not something I would serve my guests. Most factory ship caught and frozen fish is excellent. minimal handling and blast freezing preserves the freshness. Hope the second package is better. Also, if the package was allowed thaw and was refrozen, that could also ruin the fish.

I am not much for modern methods of food harvesting.
But after watching a complete movie on fish factory ships. I think they are amazing. Start to finish is only minutes. And nothing is wasted. CF

I am sure we will be cooking BBQ as we celebrate our day of independents meal on the 4th.
We will also have rolled grape leaves,tabbouleh salad, and Shish Barak. a Maybe even some kibbeh and fresh made flat bread. CF

Got a Meatloaf (small) in the toaster oven baking for the wife. She's sick with upper respiratory infection.... and was wishing for meatloaf ( D O N E )

The Uncle....gets salmon with wine butter sauce; mixed well cooked veggies, and sweet tater tater tots.

Me..... I will make a couple hot dogs. Dessert will be strawberry tarts with whipped cream...

If no one likes it.....they can suck an egg.

We had a priest friend over for dinner who is Italian, so I made Basil infused whole wheat linguini, homemade sweet sauce, meatballs & homemade focaccia bread. Winner, winner, pasta dinner! He is a happy guy, and overate like a good Italian boy.

Dr. Jimmy here, said to Nurse Tina, "Be careful and rub your hands with sanitizer when you touch the handles on the slots machines. Use plastic forks at the buffet and don't drink the ice cubes in drinks... The bus ride to the casino is a skeething germ factory!"
She didn't listen, and said,"It was a church trip, and holy things don't spread germs!"

They even brought the parish priest... All dressed up without anything that would give his profession away. Tina told him,"Come on father, We need some Holy Luck if we are gonna win!" ..... He agreed to go, but said,"Just don't call me Father!"

Pulled out a package of riblets/rib tips and baked them in the oven for three hours...low & slow. Baked sweet potato and baked beans rounded out the meal.

Feel like Dog Doo today.. Gettin a sore throat. Bummer.

Made ribas slow and low in the oven. It was only 64º today, and breezy.
Took advantage and Tina baked a banana bread too.

Tina also made Greek Style Chili Sauce for chilidogs and burgers.
I hogged on too many ribs to eat a hot dog.
That could wait till tomorrow.

Had store Deli Mac and Potato salad...and KFC coleslaw.

DD didn't come over for the fourth. She had too much bull crap work to do on the farm.
They have their hands full this week end getting 30 lambs ready for auction tuesday .:dizzy::thewave:

A big pot of chili and a pan of cornbread. Sliced home grown tomatoes and avacado on a bed of lettuce as a side. Or maybe I'll use a tortilla instead.

Being a displace Carolina guy, it is good I learned how to make NC pork BBQ before I moved to Indiana.
Used some of the 'burnt ends' from the pork shoulder in the beans. Don't know why I grabbed pinto instead of pork and beans. Won't make that mistake again, but the Q was spot on delicious.
Wish my phone took better pictures.

Hey "A"... d'Yintz have a Philadelphia Pretzel Factory??

One just opened by here, and their pretzels are good. The soft ones, nd they have filled ones with steak or sausage / pepperoni and cheese.

Having just returned from Myrtle Beach you would think we have had our fill of BBQ. We had our annual Rib Fest in town so on Saturday we just had to go and make pigs of ourselves. Ribs, chicken, corn on the cob and BBQ baked beans. I think I'm still full. Here are some teaser pics.

last night, made linguine/marinara, oh, yeah- put a 'lil pesto in, too & put a few olives in, snacked on raw milk cheddar & cherries, 'nilla puddin', & almond/cashew/hazelnut milk.

tonite was cheddar & cherries, last night's re-warmed pasta, a milk & i'm sipping on a lime essesce drink.

Sounds good to me Dan.

Like my DD and DIL ....they are here now learning hands on to have the family cooking to keep and enjoy.
I have to show them how to make city chicken and Tina has to show them how to make
nut and poppy seed rolls. That would be DD; because she is the baker.
