This was Belle Resnick's recipe. Belle was a great friend of my mom and a very good cook! This was a cake we often made for Rosh HaShana. It is very simple to make.

Apple Cake Kuchen
Ingredients:
4 large eggs
1 cup sugar
2 teaspoons baking powder
1-1/2 cups all-purpose flour
3/4 cup vegetable or canola oil
1-1/2 teaspoons cinnamon mixed with 2 Tablespoons sugar
5 apples, sliced very thin (a tart apple is a good choice here because of all the sugar but my mom used Rome apples)

Directions:
Grease a 9 x 13 inch baking pan. Preheat the oven to 350 degrees. Mix the eggs, sugar and the oil. Sift the flour and the baking powder two times and add to the egg mixture. Pour half of the batter into the prepared pan. Cover with a layer of half of the sliced apples and sprinkle half the cinnamon-sugar mixture over the apples. Pour the rest of the batter over the apples. Then place the rest of the apples on top of the batter and sprinkle the rest of the cinnamon-sugar mixture on top. Bake for 1 hour at 325 degrees. Test. Bake longer if necessary.
