My mother always made saurkraut this way, and I love hers.

Joan's Saurkraut

1 can or bag of saurkraut
1 small onion or half a large onion, diced
2 slices of bacon, cooked and crumbled
Salt and freshly ground black pepper

Drain saurkraut in a sieve or colander, and rinse with hot water.

Carmelize onion in a little olive oil and butter, mixed. Add crumbled bacon and sautee a few minutes.

Add saurkraut, salt and freshly ground pepper (I use less pepper than Mom did, but she LOVED her pepper!)

That looks delish! I know your mom's way is healthier, but I'd sure be tempted to saute that onion in the bacon drippings :brows:. Old habits are hard to break, but I'm trying.......:bonk:.

Oh, Cooksie ... Mom probably did that!

But I had the bacon all cooked from another dish and I had tossed the bacon fat.

I would bet that my mother carmelized the onions in bacon grease. :agree:

This is definitely on my "after diet" list. It sounds delicious.

I am starting to build the list as I am hopefully closing in on the goal. I like the combinations of flavors here.

This time I omitted the bacon (forgot about it, to be honest) and used re-hydrated dried wild mushrooms.

I may have stumbled on a new favorite - it was wonderful!

Served with hot dogs and beans.
